What makes a restaurant pop? I mean, some places have a wait time of 20 minutes on Monday mornings just to get to speak to the hostess & another 20 minutes before even getting a peek & at the menu. Well, I've come to realize the magic lies more with our inherent "Lemmings mentality" than the ability to seek out a truly great eatery. You see a poppin' place & assume it must be great, well, in most cases that's what the 100 people in line before you thought too! Besides that, the basic factors that makes or brakes a pig out joint are surely atmosphere & environmental design, quality of food, quality of service & in my opinion, most definitely... BOOZE!

The reason for this rant is because I found a truly great restaurant called Sushi Central, Well, it was featured on Food Networks "Throw Down with Bobby Flay" but I just found out that it happens to be about four blocks from my house. It's not a valet endowed, yuppie friendly place, it's actually located in a strip mall, & the design & atmosphere certainly lacks the nightclub draw... and here's the kicker, there's no alcohol!!! To most people, except for Mormons & yours truly, this would be the deal breaker. But if you want some truly exceptional Sushi, & don't mind bringing your own Sake (take an extra bottle for Phillip Yi & his staff) this is the place to be.
